Hotteok Recipe: A Sweet Korean Pancake
Ingredients:
- 1 cup glutinous rice flour - 1/2 cup all-purpose flour - 1/4 cup granulated sugar - 1 teaspoon baking powder - 1/2 teaspoon salt - 1 cup warm water - 1 tablespoon vegetable oil
Filling:
- 1 cup brown sugar - 1/2 cup chopped nuts - 1/4 cup chopped cinnamon - 1/4 teaspoon ground ginger
Instructions:
1. In a large bowl, whisk together the glutinous rice flour, all-purpose flour, sugar, baking powder, and salt. 2. Gradually add the warm water, whisking until a smooth batter forms. 3. Add the vegetable oil and stir to combine. 4. Cover the batter and let it rest for at least 30 minutes. 5. In a small bowl, combine the brown sugar, nuts, cinnamon, and ginger. 6. To make the hotteok, heat a nonstick pan over medium heat. 7. Grease the pan with a little oil. 8. Ladle 1/4 cup of the batter into the pan and spread it out into a thin circle. 9. Sprinkle 1 tablespoon of the filling into the center of the batter. 10. Fold the edges of the batter over the filling, forming a half-moon shape. 11. Cook for 2-3 minutes per side, or until golden brown and cooked through. 12. Serve hot with honey or condensed milk.
Tips:
- For a chewier hotteok, use more glutinous rice flour in the batter. - For a sweeter hotteok, use more brown sugar in the filling. - You can add other ingredients to the filling, such as chocolate chips, fruit, or cheese. - Hotteok can be stored in an airtight container at room temperature for up to 2 days.
